Pancakes & home fries with asparagus

Pancake Mix

1 cup stone ground rice flour
-
1 cup unsweetened Vanilla Almond Milk
-
1 tsp pure vanilla
-
1 tsp cinnamon
-
1/2 tsp salt
-
1 tbsp maple syrup
-
3 tbsp of olive oil
-
1/4 cup of ground flax seeds
-
1 tbsp of baking powder
Home fries w/ asparagus

1 whole potato
-
1/2 diced onion
-
5 spears of asparagus
-
2-3 finely chopped garlic cloves
-
dash of salt & pepper
Directions: Pancakes

Add all dry ingredients to a bowl then whisk until all ingredients are completely incorporated.

Add vanilla, olive oil and almond milk to bowl and whisk until mixture is lump free and batter has a smooth consistency.

Turn stove med-high heat and add just enough oil to cover pan. When oil is hot, pour batter in making pancakes to your fulfilling size.

When bubbles appear, it's time to flip.

Once pancakes are added to your plate, top with sesame seeds and chia seeds for nutritional boost. Add syrup and enjoy.
Directions: Home fries & asparagus

Pre-heat oven at 350 degrees.

Wash your potato and asparagus spears thoroughly. Cut potato into small squares then place in a bowl.

Cut the white end of your asparagus spears off (do not use) then chop spears into 1/2 inch pieces. Place into bowl with potato squares.

Add chopped garlic, onions, salt & pepper and oil into bowl with potato and asparagus then mix well with hands.

Add mixture to medium baking pan then place in oven uncovered for 15-20 minutes or until potatoes are soft.
